About the Producer: Oscar and Francisca Chacón are third-generation coffee producers, owners and operators of the Las Lajas Micromill. The couple is committed to quality and innovation—they are among the very first farmers in Costa Rica to produce honey and natural process specialty coffee.
Processing: In the black honey process, the cherries are classified, then pulped and transferred to raised beds. During the first 2 days, the beans do not receive any movement until the third day, when they begin to make periodic movements, 3 to 4 times daily. This process lasts from 15 to 20 days.
Taste with Us: This Costa Rica is complex and rounded with richly sweet strawberry jammy-ness and vibrant acidity. In the Black Honey process, the coffee seed is removed from the cherry but leaves 100% of the honey-like residue on the seed. It is then dried and fermented for 15-20 days on patio beds. This results in a sweet and deeply fruity flavor profile.
