About the Producer:
Marceli Calderón is a multi-generational producer in the Salado Blanco community of southern Huila, Colombia. She recently stepped into leadership at Finca La Loma, carrying forward the work her father built over years of steady focus on quality.
The Pacamara variety consistently cups with distinction and complexity. This specific coffee stood out to us on the cupping table with a floral vibrancy that we loved.
Processing:
The ripe cherries are harvested and left to ferment for 48 hours in cherry form. Then the cherries are depulped and transferred to a fermentation tank for an additional 72 hours. Careful temperature regulation and consistent movement optimize the fermentation process.
By the third day, the coffee develops a distinct fermented aroma, like a fruity pineapple liqueur. This signals that the coffee is ready to be washed. The coffee is moved to the drying area, where the timeline for drying is weather-dependent.
