About the Producer: Marceli Calderón is a multi-generational producer from the Salado Blanco community in southern Huila, Colombia. She has recently taken over leadership of the operation from her father at Finca La Loma, where the Castillos and Caturras are destined for the community blend, and the Pacamaras (such as this coffee) are separated due to the variety’s unique and delicious cup profile.
Processing Details: The ripe cherries are harvested and left to ferment for 48 hours in cherry form. After this stage, the cherries are depulped and transferred to a fermentation tank for an additional 72 hours. During this time, careful temperature regulation and consistent movement optimize the fermentation process. By the third day, the coffee develops a distinct fermented aroma, reminiscent of a fruity pineapple liqueur. This scent signals that it's time to wash the coffee. The coffee is then moved to the drying area, where the timeline for drying is weather-dependent.
