Producer: Marceli Calderón Farm: La Loma Location: Salado Blanco, Huila, Colombia Process: Washed Variety: Pacamara Elevation: 1650 masl
Tasting Notes: Coconut, Banana, Sunshine, Citrusy
Processing Details:
First–the ripe cherries are harvested. These are left to ferment for 48 hours in cherry form. After this stage, the cherries are depulped and transferred to a fermentation tank for an additional 72 hours. During this time, careful temperature regulation and consistent movement optimize the fermentation process. By the third day, the coffee develops a distinct fermented aroma, reminiscent of a fruity pineapple liqueur. This scent signals that it's time to wash the coffee. The coffee is then moved to the drying area; the duration of drying time depends on the weather.
Why We Love It: Catch the flavor wave and hang on! This complex fruity coffee struck us as having an "endless summer" kinda feeling. Fellow Floridians, you know what I'm talking about. The coconut note we taste in this coffee is rare and we love it.
