About the Producer:
We are thrilled to work with Colombian producer Alejandro Ariza of Inza 1640 for a third consecutive year. Based in Inzá, Cauca, Colombia, Alejandro farms on land shaped by the volcanic activity of Sotará and Puracé—a region known for producing aromatic, complex coffees. The work he puts in year after year shines in this harvest, which we think is tasting better than ever. Still in the early years of his career, Alejandro has been passionately refining his craft each passing season. We are excited to continue our partnership and believe the best is still ahead.
Processing:
This single-origin washed coffee undergoes 20 to 48 hours of fermentation before being dried on sun beds. Meticulous hand-picking and sorting ensures 95% fully ripe cherries at harvest; it's this level of selectivity that lays the foundation for a clean, expressive cup.
