About the Producer:
For the past three years, we've been roasting Alejandro Ariza's washed Castillo, a staple of our menu. Lately, he's been experimenting in small lots with new varieties and processing methods. This pink bourbon is the result of one of these experiments.
Based in Inzá, Cauca, Colombia, Alejandro farms on land shaped by the volcanic activity of Sotará and Puracé—a region known for producing aromatic, complex coffees. Still in the early years of his career, Alejandro has been passionately refining his craft each passing season.
Processing:
Alejandro's pink bourbon is grown in the lot his mother named "Yarumo," after the towering yarumo trees that cast shade over the coffee plants. Before harvesting, brix levels are measured to ensure the plants are within the optimal range of 20–24%. The coffee is then harvested and sorted—the best cherries are chosen for clean fermentation results and to create the desired cup profile. After depulping, the coffee is then rinsed—this guides the fermentation process to lean into expressing more nuance of the pink bourbon variety, beyond red fruits flavors. Finally, the coffee is dried for 12 days in a covered drying structure.
La Argelia recently became the first and only farm in Inzá to be satellite-certified and georeferenced, representing the farm's implementation of low-carbon-footprint fertilizers and practices to reduce CO2 emissions and mitigate climate change.
