About the Producer:
Tomas farms alongside his wife and two children in La Coipa, tending two small plots—El Cedro and El Níspero. On the two hectares of Finca El Cedro, he grows Bourbon and Yellow Caturra under the shade of cedar trees, which give the farm its name and are commonly used throughout the region. Just downhill from El Cedro, Tomas also keeps a garden of orchids, reflecting his care for both the land and its biodiversity.
Processing:
Ripe cherries are hand-picked during the day and rinsed before draining for two hours. The coffee then undergoes a 48-hour fermentation in barrels under shade at cool temperatures (14–16 °C). After this first fermentation, the cherries are pulped and returned to barrels for a second 48-hour fermentation. Once complete, the coffee is washed three times to fully remove mucilage, rested to drain, and then slowly dried in a solar dryer for 20–25 days until optimal moisture is reached.
