When we bring in a new coffee, it can take several iterations until we reach our desired roast profile. The first few tests are often still good, but not quite where we want them. We'd rather sell the coffee at a low price than dispose of it. These batches can still be enjoyed, but they are discounted to reflect that they did not reach our standards.
